In celebration of National Potato Day, Charles, our special guest blogger, is sharing his favorite potato recipes -- each costing around $7. If you're looking for delicious, new and cost-efficient recipes for you and your family, take a look at these tasty taters...
The Poor Chef: 5 Potato Recipes for Less
- Peruvian Style Potato Salad Serves: 4 Ingredients: 2 pounds of new potatoes (white or red) 1/8 cup red wine vinegar 1/8 cup olive oil 2 cloves of garlic, finely minced 1/4 medium red onion, finely chopped 1/4 cup fresh mint leaves, chopped Directions: Scrub, steam, and slice potatoes. While potatoes are being steamed whisk together red wine vinegar and olive oil. Add garlic and red onion. While potatoes are warm season with 1 tsp. sea salt and black pepper to taste. Add dressing and toss lightly. Let sit for at least 30 minutes. Just before serving, top with fresh mint leaves. Enjoy cold or at room temperature. Chef Charles: The mild flavor of the potatoes offers a wonderful “canvas” for the tangy vinegar, pungent garlic, and mild red onion. The flavor provided by the mint leaves adds an additional burst of freshness to this salad. Consider doubling or tripling this recipe to take this to a late summer picnic.
