Recipe: Fern's Spinach Bars

"Anderson's Top Chef Challenge" competitor Fern created this dish because her grandson didn't like eating spinach. Sound familiar in relation to a particular talk show host? Well, after trying Fern's spinach bars for himself, Anderson said it, "I like these... I could eat these."

Fern's Spinach Bars:
4 Tablespoons butter
3 eggs slightly beaten
1 cup flour
1 tsp baking powder
1 cup milk (whole)
1/2 tsp salt
1 tsp oregano
1 small onion finely chopped
8 oz shredded cheddar cheese
8 oz shredded Monterrey jack
½ tsp garlic powder
2 pkgs frozen chopped spinach (20 oz total) thawed and thoroughly drained
Preheat oven to 350. Melt butter in 13 x 9 x 2 baking pan and spread evenly, coating pan. In large mixing bowl combine remaining ingredients and spread into pan. Bake at 350 for 35 minutes. Cool and cut into squares. May make a day ahead and reheat.
Makes 32 bars. Serves 10 - 12 as appetizer
